For the dough:

  • Milk – 0.5 cups
  • Sugar – 1 tbsp. spoon
  • Flour – 3 tbsp. spoons
  • Dry yeast – 20 gr.
For the test:
  • Milk – 1 glass
  • Eggs – 2 pcs.
  • Flour – 6.5 cups
  • Butter – 150 gr.
  • Sugar – 2/3 cup
  • Salt – 1 teaspoon
  • Bananas – 2 pcs.
Additionally you will need:
  • Egg (for greasing buns) – 1 pc.
  • Bananas (for filling) -2 pcs.

Banana bun recipe

First of all, let's prepare the dough. In a deep bowl, add flour, sugar, dry yeast and pour warm milk over everything.



Mix the contents of the bowl thoroughly and place in a warm place. After 25-30 minutes the dough should rise.



Peel the bananas and mash with a fork. It is best to use overripe fruits. These bananas are much easier to puree.



Add banana puree to the dough and mix gently.



Add eggs, melted butter, salt, sugar and carefully pour in warm milk.



Add flour and knead the dough for banana buns. The finished dough should not stick to your hands.



Let the finished dough rise for about 1.5 hours. You will need to knead it once during the process. The dough should increase in volume at least 2 times.



We form buns from the dough and put a piece of banana inside.



Place the buns on a baking sheet lined with parchment paper and wait for the dough to proof. Brush with beaten egg and place in an oven preheated to 180 degrees.



Bake the buns until ready for 30-40 minutes at 180°.

Cook the milk caramel: to do this, pour sugar into a saucepan, add two tablespoons of water and a tablespoon of lemon juice and cook over moderate heat until the syrup turns a beautiful amber color. Add cream and let it simmer, the caramel should not be sticky.

Add flour and make soft dough. I eyeball the flour, maybe more is needed. But do not add too much flour, because... the dough should not be tight! Otherwise, the buns will turn out too hard (although if you add too little flour, they will begin to spread). That is, the dough should be soft and slightly springy.

Place the dough in a warm place so that it rises at least once. After that, we divide it into several parts, roll each part into a sausage, which we cut into pieces - from which we form buns.

Place the resulting buns on a baking sheet (you can grease them with milk on top), sprinkle with sesame seeds or poppy seeds, if you like.

The buns are baked for 20-25 minutes at a temperature of 200 degrees (but it’s better to check your oven; you may have to adjust the temperature).

The result is delicious, filling and aromatic buns!
